Steak with Shrimp and Lobster (Print Version)

# Ingredients:

01 - 2 filet mignon steaks (8-10 oz, 1½-2 inches thick).
02 - 2 medium lobster tails, shell removed, cut into 1 inch pieces.
03 - 1 lb large shrimp, peeled and deveined.
04 - 8 tbsp unsalted butter (for sauce).
05 - 3 tbsp unsalted butter (for steak).
06 - 2 tbsp olive oil, divided.
07 - 1/3 cup dry white wine.
08 - 1/4 cup clam juice.
09 - 1 1/2 cup heavy cream.
10 - 4 thyme sprigs.
11 - 2 garlic cloves.
12 - 1 tsp garlic powder.
13 - 1 tsp onion powder.
14 - 1 1/2 tsp smoked paprika.
15 - Salt and pepper to taste.

# Instructions:

01 - Season filets on all sides with salt, pepper, garlic powder and onion powder.
02 - Sear in hot cast iron with oil for 2 minutes. Add butter, garlic, thyme and cook 3 more minutes. Flip and cook 4 minutes, basting with butter.
03 - Remove steaks at 5 degrees below target temp. Let rest 10 minutes.
04 - Season and sear shrimp 2-3 minutes. Remove. Sauté lobster until pink, about 3 minutes. Remove.
05 - Melt butter, add wine and clam juice. Whisk in cream and seasonings. Simmer 10 minutes until thickened.
06 - Return seafood to sauce, warm 1-2 minutes. Serve over steaks.

# Notes:

01 - Medium rare: 130-135°F.
02 - Medium: 140-145°F.
03 - Medium well: 145-150°F.
04 - Well done: 160°F and up.
