# Ingredients:

01 - 1 ½ cups (126 g) graham cracker crumbs
02 - 6 tablespoons unsalted butter, melted
03 - ¼ cup (50 g) granulated sugar

→ Filling

04 - 16 ounces cream cheese, room temperature
05 - 2 large eggs, room temperature
06 - ⅓ cup (67 g) granulated sugar
07 - 1 teaspoon vanilla extract
08 - ¼ teaspoon kosher salt
09 - 2 cups (332 g) freshly diced strawberries

→ Crumble Topping

10 - ¾ cup (94 g) all-purpose flour
11 - ¼ cup (50 g) light brown sugar, packed
12 - ¼ teaspoon kosher salt
13 - 5 tablespoons unsalted butter, melted

# Instructions:

01 - Preheat oven to 350°F. Line a 9x9-inch baking dish with parchment paper, including up the sides.
02 - In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until it resembles wet sand. Press the mixture into the lined baking dish.
03 - In a large bowl, using a hand mixer, beat cream cheese, eggs, granulated sugar, vanilla extract, and kosher salt until smooth. Spread the cream cheese filling evenly over the prepared crust.
04 - Top the cream cheese filling evenly with diced strawberries.
05 - In a medium bowl, whisk together all-purpose flour, light brown sugar, and kosher salt. Stir in melted butter until a crumbly dough forms. Sprinkle the crumble topping evenly over the strawberries.
06 - Bake for 35-40 minutes, or until set.
07 - Transfer the baking dish to a wire rack and let it cool completely, about 1 hour. Then, transfer it to the refrigerator until thoroughly chilled, another hour. Serve chilled.
