Easy Fresh Strawberry Danish Recipe (Print Version)

# Ingredients:

→ For the Strawberry Mix

01 - 4 cups sliced fresh strawberries
02 - 1 tablespoon cornstarch
03 - 1 tablespoon sugar

→ For the Cream Cheese Filling

04 - 8 oz (226g) cream cheese, room temperature
05 - 1/2 cup (60g) powdered sugar
06 - 1 teaspoon vanilla extract

→ For the Pastry

07 - 2 puff pastry sheets, thawed
08 - 1 large egg beaten with 1 teaspoon water
09 - 2-3 tablespoons sugar for topping (optional)

→ For the Glaze

10 - 1/4 cup strawberry jam (optional)
11 - 1 cup powdered sugar
12 - 1/2 teaspoon vanilla extract
13 - 2-3 tablespoons milk

# Instructions:

01 - Let your puff pastry thaw for about 30-45 minutes at room temperature. Heat your oven to 400°F and line your baking sheets with parchment paper.
02 - Mix your sliced strawberries with sugar and cornstarch in a bowl. Let them hang out for 15 minutes to get juicy.
03 - Beat your room temperature cream cheese until it's smooth, then mix in the powdered sugar and vanilla until everything's well combined.
04 - Cut each puff pastry sheet into 6 rectangles. Score a border about 1/4 inch from the edges, spread cream cheese filling in the middle, and top with your strawberries. Brush the edges with beaten egg and sprinkle with sugar if you like.
05 - Pop them in the oven for 20-25 minutes until they're golden brown. If your pastry got warm while preparing, chill them for 15-20 minutes before baking for extra puffiness.
06 - Let them cool for 5 minutes on the baking sheet, then move to a rack. Top with warm strawberry jam or make a quick vanilla glaze with powdered sugar, milk, and vanilla to drizzle over top.

# Notes:

01 - These taste best warm or at room temperature within 2-3 hours of baking
02 - Chill the assembled danishes before baking if the pastry gets too warm
03 - You can store leftovers in the fridge for 2-3 days
