Sweet Chili Shrimp Asparagus (Print Version)

# Ingredients:

01 - 1 lb shrimp, peeled and deveined
02 - 1 bunch asparagus, trimmed and cut into 2-inch pieces
03 - 2 tablespoons olive oil, divided
04 - 3 garlic cloves, minced
05 - 1/3 cup sweet chili sauce
06 - 1 tablespoon soy sauce
07 - 1 teaspoon sesame oil
08 - 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)
09 - Salt and pepper, to taste
10 - Sesame seeds, optional for garnish
11 - Chopped green onions, optional for garnish

# Instructions:

01 - Season the shrimp with a pinch of salt and pepper. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink and fully cooked. Remove from the skillet and set aside.
02 - In the same skillet, add the remaining tablespoon of olive oil. Toss in the asparagus and sauté for 3-4 minutes until tender but still crisp. Add the minced garlic and cook for 1 more minute.
03 - In a small bowl, whisk together sweet chili sauce, soy sauce, and sesame oil. Pour the sauce into the skillet with the asparagus, stirring to coat evenly. Add the cornstarch slurry and cook for 1-2 minutes until the sauce thickens slightly.
04 - Return the cooked shrimp to the skillet and toss everything together until well coated with the sauce. Remove from heat and garnish with sesame seeds and green onions, if desired. Serve hot over steamed rice, noodles, or enjoy it on its own.
