Thai Peanut Curry (Print Version)

# Ingredients:

01 - 2 carrots, cut into bite size pieces
02 - 2 medium potatoes, cut into bite size pieces
03 - 1/2 yellow onion, diced
04 - 2 chicken breasts, cubed

→ Sauce

05 - 2 Tbsp. olive oil (or coconut/vegetable oil)
06 - 2 tsp. ground ginger
07 - 2 tsp. minced garlic
08 - 1 jar (4 oz.) red curry paste
09 - 2 cans coconut milk
10 - 1/4 cup + 2 Tbsp. peanut butter
11 - 5 Tbsp. brown sugar
12 - 4 tsp. soy sauce
13 - Juice from 1 lime

→ For Serving

14 - Steamed rice (Jasmine, white, or brown)
15 - Chopped peanuts for garnish

# Instructions:

01 - In a large skillet or pot heat oil over medium-high heat. Add diced onions, chopped carrots, and chopped potatoes. Sauté for 4-5 minutes until vegetables begin to soften.
02 - Add cubed chicken, ground ginger, minced garlic, and red curry paste. Mix well to combine and sauté for an additional 2 minutes to develop flavors.
03 - Pour in coconut milk and stir thoroughly. Reduce heat to medium-low and simmer for 10 minutes or until carrots and potatoes become tender.
04 - Stir in peanut butter, brown sugar, soy sauce, and lime juice. Cook for another 4-5 minutes until sauce thickens slightly and flavors meld together.
05 - Ladle curry over steamed rice and garnish with chopped peanuts.
