# Ingredients:

01 - 2 ripe mangoes, peeled and cubed
02 - 1 cucumber, diced
03 - 1/4 red onion, thinly sliced
04 - 1/4 cup fresh cilantro, chopped
05 - 1 tablespoon lime juice
06 - 1 tablespoon olive oil
07 - 1 teaspoon honey (or maple syrup for vegan)
08 - 1/2 teaspoon salt
09 - 1/4 teaspoon black pepper
10 - 1/2 jalapeño, finely chopped (optional)

# Instructions:

01 - In a large bowl, combine the cubed mango, diced cucumber, red onion, and cilantro.
02 - In a small bowl, whisk together lime juice, olive oil, honey, salt, and pepper.
03 - Pour the dressing over the mango and cucumber mixture and toss gently to coat all ingredients evenly.
04 - If using jalapeño, add it for an extra kick of heat.
05 - Refrigerate the salad for 15-20 minutes before serving to allow flavors to meld together.
