01 -
Thoroughly clean sweet potatoes and cut into 1.25 cm thick rounds, leaving skins on or peeling as preferred.
02 -
Set oven to 200°C and allow to fully preheat.
03 -
Combine sweet potato rounds with melted butter, 1 teaspoon cinnamon, salt, and pepper. Toss well until evenly coated, using a bowl or sealable plastic bag.
04 -
Distribute sweet potato slices in a single layer on a baking tray, leaving space between pieces to avoid overcrowding.
05 -
Bake in the preheated oven for 25–30 minutes, or until slices are fork-tender. Baking time may vary depending on thickness.
06 -
In a bowl, mix remaining maple syrup, chopped walnuts, 0.5 teaspoon cinnamon, and thyme.
07 -
Remove tray from oven. Spoon approximately 1 teaspoon of walnut maple mixture over each sweet potato slice.
08 -
Return tray to oven and bake for an additional 8–10 minutes, until edges are caramelized.
09 -
Serve hot, optionally garnished with crumbled feta cheese if desired.
