Whipped Feta Roasted Strawberries (Print Version)

# Ingredients:

→ Whipped Feta

01 - 225 g feta cheese, crumbled
02 - 115 g cream cheese, softened
03 - 15–30 ml extra-virgin olive oil
04 - 15 ml freshly squeezed lemon juice
05 - Freshly ground black pepper, to taste

→ Roasted Strawberries

06 - 480 ml fresh strawberries, hulled and halved
07 - 15 ml balsamic vinegar
08 - 15 ml honey
09 - Freshly ground black pepper, to taste

→ Garnishes

10 - Chopped fresh basil or mint leaves
11 - Extra olive oil, for drizzling
12 - Black sesame seeds (optional)

# Instructions:

01 - Preheat oven to 190°C. In a bowl, toss halved strawberries with balsamic vinegar, honey, and black pepper. Spread in a single layer on a parchment-lined baking sheet. Roast for 15–20 minutes until softened and lightly caramelized. Allow to cool.
02 - In a food processor, combine crumbled feta, softened cream cheese, olive oil, lemon juice, and black pepper. Process until smooth, scraping sides as needed. Adjust consistency with additional olive oil if required.
03 - Spread whipped feta onto a serving plate, creating a swirl with the back of a spoon. Spoon cooled roasted strawberries over the top. Drizzle with extra olive oil, scatter with chopped basil or mint, and sprinkle black sesame seeds if using.
