In a large mixing bowl, thoroughly combine ground chicken, chopped spinach, shredded white cheddar, breadcrumbs, egg, minced garlic, onion powder, paprika, salt, and black pepper. Mix until evenly incorporated. Mixture will be slightly sticky.

Divide the mixture into four equal portions. With lightly greased hands, shape each portion into a patty about 1.25 cm thick.

Heat olive oil in a large skillet or grill pan over medium heat. Place patties in the pan, making sure not to overcrowd. Cook each side for 5-6 minutes until golden brown and internal temperature reaches 75°C.

Transfer cooked patties to a plate and allow them to rest for a few minutes. Toast burger buns if desired. Assemble each burger with lettuce, tomato, avocado, or additional white cheddar as preferred.
