Grilled Asparagus with Lemon Feta (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 bunches of asparagus
02 - 2 garlic cloves, minced
03 - 2 Tbsp olive oil
04 - ¼ tsp salt
05 - ¼ tsp black pepper
06 - 1 Tbsp fresh lemon juice
07 - ½ cup feta, crumbled
08 - Lemon zest, optional

# Instructions:

01 - Snap the ends off your asparagus stalks and add them to a large bowl or tray. Then add 1 tablespoon of olive oil, your garlic, salt and pepper and toss until the asparagus are fully coated.
02 - Turn your grill on to medium-high (or heat a grill pan on the stove over medium-high heat). While the grill heats, rub olive oil over your grates so the asparagus won't stick.
03 - Once hot, place your asparagus on the grill perpendicular to the grates so they don't fall through. Cook your asparagus for 3-5 minutes or until they're just tender. (Do not flip your asparagus! We're only cooking them on one side.) Once done, remove them from the grill and set them aside to cool slightly.
04 - While the asparagus cools, whisk the lemon juice and remaining 1 tablespoon of olive oil together in a bowl and set it aside.
05 - Once the asparagus is cool enough to touch, cut it into 3rd's and add it to a large bowl. Then add your crumbled feta and drizzle your vinaigrette over the top. Toss the asparagus until they're fully coated then serve immediately with a sprinkle of lemon zest (if desired).
