Avocado-Egg Toast (Print Version)

# Ingredients:

01 - ¼ avocado
02 - ¼ teaspoon ground pepper
03 - ⅛ teaspoon garlic powder
04 - 1 slice whole-wheat bread
05 - 1 large egg
06 - 1 teaspoon Sriracha (Optional)
07 - 1 tablespoon scallion, sliced (Optional)

# Instructions:

01 - Toast the whole-wheat bread in a toaster or small skillet. Allow it to cool and firm up before adding toppings.
02 - In a small bowl, combine the avocado flesh with ground pepper and garlic powder. Gently mash with a fork until desired consistency is reached.
03 - Heat a small nonstick pan with cooking spray or a touch of olive oil. Crack the egg into the hot pan and cook undisturbed until whites are set and edges are crispy, about 3 minutes. Remove from heat.
04 - Spread the avocado mixture onto the cooled toast, then top with the fried egg. If desired, garnish with Sriracha and sliced scallions.

# Notes:

01 - A fork works well for both mashing the avocado and spreading it onto the toast.
02 - Allow the toast to cool slightly before adding avocado to prevent sogginess.
