Crispy Homemade Carrot Tots (Print Version)

# Ingredients:

01 - 1 cup finely grated carrots, excess moisture squeezed out
02 - ⅓ cup finely shredded Mexican style cheese
03 - ¼ cup panko breadcrumbs
04 - 1 large egg
05 - ½ teaspoon garlic powder
06 - ½ teaspoon dried minced onion
07 - ¼ teaspoon seasoned salt
08 - ¼ teaspoon black pepper
09 - Olive oil for brushing

# Instructions:

01 - Brush air fryer rack with olive oil. Preheat your air fryer according to manufacturer's instructions.
02 - Add squeezed, grated carrots to a medium sized bowl. Add cheese, breadcrumbs, egg, garlic powder, dried onion, seasoned salt, and black pepper, then stir until just combined. The mixture should appear somewhat dry.
03 - Scoop out carrot mixture with a 1.5 tablespoon scoop and roll into balls. Place formed tots on the prepared air fryer rack.
04 - Cook for 6-8 minutes, or until the outside is crispy and starts to brown. Serve hot with your favorite dipping sauce if desired.

01 - The carrot mixture will appear dry, but this consistency creates the perfect texture for the finished tots.
