Cauliflower Pizza Bianca (Print Version)

# Ingredients:

01 - 2 (10 oz) bags riced cauliflower, thawed.
02 - 2 oz cream cheese, softened.
03 - 1/4 cup plus 1 tablespoon grated parmesan cheese, divided.
04 - 1 large egg, beaten.
05 - 3 garlic cloves, grated, divided.
06 - 1 3/4 teaspoons kosher salt, divided.
07 - 1 teaspoon black pepper, divided.
08 - 1/2 teaspoon Italian seasoning.
09 - 3 tablespoons olive oil, divided.
10 - 1 tablespoon yellow cornmeal.
11 - 1 tablespoon unsalted butter.
12 - 1/2 lb baby bella mushrooms, sliced.
13 - 1 teaspoon fresh thyme.
14 - 2 teaspoons balsamic vinegar.
15 - 1/3 cup ricotta cheese.
16 - 2 tablespoons chopped Italian parsley.
17 - 1 1/2 cups shredded mozzarella cheese.

# Instructions:

01 - Heat oven to 400°F with pizza stone or inverted baking sheet on upper third rack.
02 - Squeeze thawed cauliflower in kitchen towel to remove moisture.
03 - Mix dried cauliflower with cream cheese, 1/4 cup parmesan, egg, garlic, seasonings. Form into 12-inch round on oiled parchment.
04 - Bake on preheated stone 20-25 minutes until golden.
05 - Sauté mushrooms in butter with thyme, garlic, seasonings until brown. Add balsamic.
06 - Mix ricotta, parsley, garlic and seasonings.
07 - Brush crust with oil, add cheeses and mushrooms. Bake 12-14 minutes until bubbly.
08 - Rest 5 minutes, garnish with parsley and optional chili flakes.

# Notes:

01 - Can omit mushrooms for classic pizza bianca.
02 - Squeezing cauliflower dry is crucial for crispy crust.
