In a large mixing bowl, combine ground chicken, chopped spinach, shredded white cheddar, breadcrumbs, egg, minced garlic, onion powder, oregano, salt, and pepper. Mix gently until just combined, being careful not to overwork the mixture.

Divide the mixture into 4 equal portions. Shape each portion into a patty approximately 1/2-inch thick. Create a small indentation in the center of each patty with your thumb to prevent puffing during cooking.

Heat olive oil in a skillet over medium heat. Cook patties for 5-6 minutes per side until golden brown and internal temperature reaches 165°F (74°C). During the final 1-2 minutes, top each patty with additional white cheddar and cover to melt.

Lightly toast the burger buns. Place a cooked patty on each bottom bun, add desired toppings such as lettuce and tomato, and finish with condiments. Serve immediately.
