Feta Spinach Grilled Cheese Sandwich (Print Version)

# Ingredients:

→ Breads & Cheeses

01 - 4 slices sourdough bread
02 - 1/2 cup crumbled feta cheese
03 - 1/4 cup shredded cheddar cheese (or mozzarella)

→ Vegetables & Herbs

04 - 2 cups fresh spinach leaves
05 - 6-8 pieces sun-dried tomatoes in oil, chopped
06 - Pinch of oregano

→ Fats & Seasonings

07 - 2 tablespoons butter, softened
08 - 1/2 tablespoon olive oil
09 - Pinch of salt
10 - Pinch of crushed chili flakes
11 - Honey for drizzling (optional)

# Instructions:

01 - Warm up the olive oil in a non-stick pan. Toss in your spinach and let it cook down for about 5-6 minutes until wilted. Add a pinch of salt, give it a stir, and move it to a plate. Wipe out the pan with a paper towel.
02 - Spread softened butter on one side of each bread slice. Place two slices in your pan, buttered side down.
03 - Arrange your chopped sun-dried tomatoes on the bread, pressing them down gently. Layer with half the feta and cheddar, then add your cooked spinach. Top with the remaining cheeses and sprinkle with oregano and chili flakes.
04 - Top each sandwich with the remaining bread slices, buttered side up.
05 - Cook over medium heat for about 5 minutes until golden brown on the bottom. Carefully flip and cook another 5 minutes until both sides are toasted and the cheese is melty.
06 - If you like, sprinkle with extra oregano and chili flakes, and drizzle with a touch of honey. Serve while everything's hot and melty.
