Combine the yogurt, nut butter, maple syrup, optional protein powder, sea salt, and vanilla extract in a large bowl. Whisk until smooth, thick, and creamy. Taste and adjust sweetness if needed.

Divide the yogurt mixture among your molds, filling each crevice about 2/3 full.

In a small bowl, combine the coconut oil and chocolate. Melt using either the double-boiler method or microwave in 30-second increments, stirring between each, until completely smooth.

Pour a small amount of melted chocolate on top of each yogurt-filled mold, filling the remaining 1/3 of each crevice.

Freeze the bites for 3-4 hours before removing from the molds. Allow to thaw for a few minutes before serving for the creamiest texture.
