Preheat the oven to 350ºF (175ºC) and grease 6 cavities of a muffin pan with coconut oil.

Combine rolled oats, peanut butter, maple syrup, vanilla extract, cinnamon and salt in a bowl and mix until thoroughly incorporated.

Divide the mixture equally among the greased muffin cavities, then create a well in the center of each cup using your fingers or the back of a tablespoon.

Bake for 12-15 minutes, or until the edges start to turn golden brown. Allow to cool in the muffin pan for 5 minutes before carefully removing with a knife. Transfer to a wire rack to cool completely.

Fill each cooled granola cup with yogurt, then garnish with fresh fruit, chia seeds and any additional desired toppings.
