02 1 large onion, diced.
03 3 large carrots, chopped.
04 2 parsnips, chopped.
05 3 stalks celery, finely chopped.

08 1 teaspoon dried turmeric.
09 3/4 cup red lentils.
10 2 tablespoons fresh parsley.
11 1/2 teaspoon sea salt.
12 4 cups vegetable broth.
13 2 cups water.
14 2 cups kale or spinach, finely chopped.
15 1 small lemon, juiced.

Instructions

Step 01

Heat oil in large pot over medium heat. Cook onion 3 minutes, then add carrots, parsnips, and celery for 5 minutes more.

Step 02
