Loaded Potato with Steak Bites (Print Version)

# Ingredients:

01 - 4 large russet potatoes.
02 - 4 tablespoons olive oil.
03 - 1.5 tablespoons sea salt.
04 - 2 lbs steak (NY strip, ribeye, sirloin or tenderloin).
05 - 2 teaspoons kosher salt.
06 - 2 tablespoons minced garlic (8-10 cloves).
07 - 6 tablespoons butter, softened.
08 - 2 tablespoons cajun seasonings.
09 - 4 tablespoons avocado oil.
10 - 1 1/2 cups heavy cream.
11 - 2/3 cup grated parmesan.
12 - 2 tablespoons minced fresh parsley.
13 - 2 lemon wedges.
14 - 1/2-1 teaspoon red pepper flakes.
15 - 1 teaspoon freshly cracked pepper.

# Instructions:

01 - Heat oven to 425°F. Rub potatoes with olive oil and sea salt. Bake 50-60 minutes until tender.
02 - Cut steak into 2-inch pieces, coat with oil and cajun seasoning. Sear in hot skillet 2 minutes per side. Add butter and garlic, toss to coat.
03 - In same pan, add butter and garlic. Add cream and simmer 3-5 minutes. Stir in parmesan, pepper flakes, parsley and lemon juice.
04 - Drop baked potatoes from 12 inches to fluff inside. Cut open, spread with butter.
05 - Fill potatoes with steak bites, top with parmesan cream sauce.

# Notes:

01 - Use low sodium cajun seasoning.
02 - Don't poke holes in potatoes before baking.
03 - Drop potatoes to make them extra fluffy.
