Orange Poppy Seed Cookies (Print Version)

# Ingredients:

→ Dough

01 - 250 grams all-purpose flour
02 - 0.5 teaspoon salt
03 - 0.5 teaspoon baking soda
04 - 2 teaspoons freshly grated orange zest
05 - 2 tablespoons poppy seeds
06 - 170 grams unsalted butter, softened
07 - 200 grams granulated sugar
08 - 1 large egg, room temperature
09 - 2 large egg yolks, room temperature
10 - 1.5 teaspoons orange extract
11 - 1 drop orange food coloring (optional)

→ Orange Glaze

12 - 60 grams powdered sugar
13 - 15–30 millilitres freshly squeezed orange juice
14 - 1 tablespoon orange zest, for garnish (optional)

# Instructions:

01 - Preheat the oven to 150°C.
02 - In a medium bowl, whisk together the flour, salt, baking soda, orange zest, and poppy seeds until evenly combined.
03 - In a large bowl, cream the softened butter and granulated sugar together until pale and fluffy.
04 - Beat in the whole egg and additional egg yolks one at a time until the mixture is light and creamy.
05 - Mix in the orange extract and food coloring, if using, until fully integrated.
06 - Fold the flour mixture into the butter mixture, stirring just until combined. Avoid overmixing.
07 - Line a baking sheet with parchment paper or a silicone baking mat. Using a cookie scoop, portion the dough onto the prepared sheet.
08 - Bake in the centre of the oven for 20 to 25 minutes, or until the edges and bottoms are barely golden.
09 - Allow cookies to cool on the baking sheet for several minutes before transferring to a wire rack to cool completely.
10 - Whisk together powdered sugar and enough orange juice to make a smooth, pourable glaze.
11 - Drizzle the glaze over cooled cookies, then sprinkle with additional orange zest if desired. Allow the glaze to set before serving.

01 - To ensure a tender crumb, avoid overmixing the dough once the flour is added.
02 - Freshly grated orange zest delivers the most vibrant citrus aroma and flavour.
