Pepper Steak with Onions (Print Version)

# Ingredients:

01 - 1 lb beef, cubed.
02 - 4 oz green pepper.
03 - 4 oz onions.
04 - 1 tsp garlic, minced.
05 - 1 tsp fresh ginger, sliced.
06 - 2 stalks scallions, cut 1 inch.
07 - Dried red peppers (optional).
08 - 1 tbsp thick soy sauce.
09 - 1 tbsp sesame oil.
10 - 1 tbsp cornstarch.
11 - 1 teaspoon salt.
12 - 1/2 teaspoon sugar.
13 - 1 tbsp cooking oil.

# Instructions:

01 - Cut beef into 1/2 to 1 inch cubes. Cut onions and peppers into similar sized chunks. Cut scallions into 1 inch lengths.
02 - Mix beef with soy sauce, sesame oil, cornstarch, salt, and sugar. Let marinate 15-30 minutes minimum.
03 - Heat oil in large pan over medium-high. Add ginger, optional dried peppers, and beef. Stir fry until mostly browned. Remove and set aside.
04 - Add more oil if needed. Stir fry peppers, onions, and garlic for about 3 minutes until softened but still crisp.
05 - Return beef to pan, add scallions. Stir fry 1-2 minutes more until beef reaches desired doneness.

# Notes:

01 - Can marinate beef up to 4 hours ahead.
02 - Adjust spiciness with dried peppers.
03 - Not all marinade will be consumed.
