Slice the dates open and remove the pits. Fill each date with ½ teaspoon of pistachio butter.

Heat the chocolate in a double boiler or microwave until completely melted.

Using tongs, dip each stuffed date into the melted chocolate, then place on a parchment-lined board.

Sprinkle the chocolate-covered dates with chopped pistachios. Refrigerate for 20 minutes until the chocolate has set.
