Creamy Potato & Hamburger Soup (Print Version)

# Ingredients:

01 - 1 1/2 pounds lean ground beef.
02 - 1 medium white onion, diced.
03 - 1 large garlic clove, minced.
04 - 6 cups chicken broth.
05 - 6 cups Russet potatoes, peeled and diced.
06 - 2 cups frozen vegetable mix.
07 - 3 teaspoons dried basil.
08 - 2 teaspoons dried parsley.
09 - 1 1/2 cups milk.
10 - 2 tablespoons cornstarch.
11 - 8 ounces Velveeta cheese, cubed.

# Instructions:

01 - Fry ground beef and onions until beef is browned and onions soft. Drain grease. Add garlic and cook until fragrant.
02 - Add beef mixture, potatoes, broth, vegetables, basil and parsley to crockpot or stockpot.
03 - Cook in crockpot 6-8 hours on low or 3-4 on high, or simmer on stove until potatoes are tender and starting to dissolve.
04 - Whisk cornstarch into milk and stir into soup. Add Velveeta and stir until melted.
05 - Ladle into bowls and serve hot.

# Notes:

01 - Can add more broth for thinner soup.
02 - Optional: add sour cream for tang.
03 - Can be made in slow cooker or on stove.
