Garlic Feta Dip (Print Version)

# Ingredients:

01 - 1 head of garlic.
02 - 2 tablespoons extra-virgin olive oil, divided.
03 - 1 cup plain Greek yogurt (2% or whole milk).
04 - 4 ounces feta cheese, crumbled.
05 - 1 tablespoon fresh lemon juice.
06 - Salt and black pepper, to taste.
07 - 1-2 tablespoons fresh herbs (parsley, chives or dill).
08 - Red pepper flakes for garnish (optional).

# Instructions:

01 - Heat oven to 400°F.
02 - Remove outer papery layers of garlic head, keeping individual cloves intact. Cut 1/4 inch off the top to expose cloves.
03 - Place garlic on foil, drizzle with olive oil, wrap loosely. Roast for 40 minutes until fragrant. Cool for 5 minutes.
04 - Squeeze roasted garlic into blender. Add yogurt, feta, olive oil, and lemon juice. Blend until smooth. Season with salt and pepper.
05 - Transfer to serving bowl. Drizzle with olive oil and garnish with fresh herbs and optional red pepper flakes.

# Notes:

01 - Add 2 tablespoons mixed fresh herbs before blending for an herbed variation.
02 - Try adding 2 tablespoons tahini and top with sesame seeds for a different twist.
