Easy Sausage and Potatoes Skillet (Print Version)

# Ingredients:

01 - 1 pound smoked sausage, cut into 1/2-inch slices
02 - 1 1/2 pounds baby potatoes, halved or quartered
03 - 1 medium onion, diced
04 - 1 bell pepper, sliced
05 - 1 cup fresh spinach (optional)

→ Seasonings & Oils

06 - 2 tablespoons olive oil
07 - 2 cloves garlic, minced
08 - 1 teaspoon smoked paprika
09 - 1 teaspoon Italian seasoning
10 - 1/2 teaspoon salt
11 - 1/4 teaspoon black pepper
12 - 2 tablespoons fresh parsley, chopped

# Instructions:

01 - Pop your potatoes in a pot of salted water and cook them for 8-10 minutes until you can easily stick a fork in them. Drain and set aside.
02 - Heat up a tablespoon of olive oil in your biggest skillet over medium heat. Cook those sausage slices until they're nice and brown on both sides, about 4-5 minutes. Scoop them out and set aside.
03 - Add your remaining oil to the same pan and throw in the onion and garlic. Let them get fragrant for about 2 minutes, then add your bell pepper and cook another 3-4 minutes.
04 - Add your parboiled potatoes to the pan along with all your seasonings. Let them cook for 5-7 minutes, giving them a stir now and then, until they're golden and crispy.
05 - Add your sausage back to the pan and give everything a good toss. If you're using spinach, toss it in now and let it wilt for about 2 minutes.
06 - Sprinkle with fresh parsley and serve it up hot. Great with some crusty bread or a side salad!

# Notes:

01 - Don't skip parboiling the potatoes - it's the secret to getting them perfectly crispy.
02 - Works great with any type of sausage - try chicken, turkey, or kielbasa for variety.
