Shrimp Scampi Lasagna (Print Version)

# Ingredients:

01 - 1 lb large shrimp, peeled and deveined.
02 - 4 tbsp unsalted butter.
03 - 4 cloves garlic, minced.
04 - 1/4 cup dry white wine or chicken broth.
05 - 1 tbsp lemon juice.
06 - 1 tsp lemon zest.
07 - 1/4 tsp red pepper flakes (optional).
08 - 2 tbsp fresh parsley, chopped.
09 - 1 1/2 cups ricotta cheese.
10 - 1 large egg.
11 - 1/2 cup grated Parmesan cheese.
12 - 1/4 tsp ground nutmeg.
13 - 12 lasagna noodles.
14 - 2 cups shredded mozzarella cheese.
15 - 1/2 cup grated Parmesan cheese.
16 - 1 cup heavy cream.
17 - Salt and pepper to taste.

# Instructions:

01 - Melt butter, cook garlic until fragrant. Add shrimp, cook until pink. Add wine, lemon juice, zest and seasonings. Cook until reduced. Stir in parsley.
02 - Combine ricotta, egg, Parmesan, nutmeg, salt and pepper until smooth.
03 - Preheat oven to 375°F. Spread shrimp mixture in greased 9x13 dish. Layer with noodles.
04 - Add ricotta mixture, shrimp mixture, and cheeses. Repeat layers, ending with noodles and cheese. Pour cream over top.
05 - Cover with foil, bake 30 minutes. Uncover, bake 10-15 minutes until golden. Rest 10 minutes before serving.

# Notes:

01 - Can adjust red pepper flakes to taste.
02 - Add more cream for extra richness.
03 - Can be assembled ahead and baked later.
