# Ingredients:

01 - 2 cups graham cracker crumbs
02 - 1/4 cup granulated sugar
03 - 1/2 cup unsalted butter, melted

04 - 16 ounces cream cheese, softened to room temperature
05 - 1 cup powdered sugar
06 - 1 teaspoon pure vanilla extract
07 - 1/2 cup sour cream
08 - 1 cup cold heavy whipping cream

→ Crunchy Topping

09 - 20 golden sandwich cookies, crushed into crumbs
10 - 3 tablespoons unsalted butter, melted
11 - 1/4 cup freeze-dried strawberries, crushed
12 - 1/4 cup strawberry gelatin powder

14 - Whipped cream for topping

# Instructions:

01 - Mix your graham cracker crumbs with sugar and melted butter until it looks like wet sand. Press this mixture firmly into a 9-inch springform pan, making sure it's even. Pop it in the fridge while you work on the filling.
02 - Beat your room temperature cream cheese with powdered sugar until it's super smooth. Mix in the vanilla and sour cream. In a separate bowl, whip the cold heavy cream until you get stiff peaks. Carefully fold the whipped cream into your cream cheese mixture until everything's well combined.
03 - Pour your creamy filling over the chilled crust, smoothing out the top with a spatula. Cover and let it hang out in the fridge for at least 4 hours until it's nice and firm.
04 - Combine your crushed golden cookies, melted butter, crushed freeze-dried strawberries, and strawberry gelatin powder in a bowl. Mix until it feels like damp, sandy crumbs.
05 - Once your cheesecake is set, pop it out of the springform pan. Press that strawberry crunch mixture all over the top and sides. Add some fresh strawberries and swirls of whipped cream if you're feeling fancy.
