Sweetcorn Leek Soup (Print Version)

# Ingredients:

01 - 2 medium leeks, sliced.
02 - 1 onion, finely chopped.
03 - 2 cups cooked corn (fresh, frozen or canned).
04 - 4 spring onions, finely sliced.
05 - 4 cups vegetable stock/broth.
06 - Salt and black pepper.
07 - Spray oil.

# Instructions:

01 - Spray deep saucepan with oil. Cook onion and leeks about 5 minutes until soft.
02 - Add salt and black pepper to taste.
03 - Add corn and stock. Bring to boil, cover and simmer 15 minutes.
04 - Blend 3/4 of soup until smooth. Return to pan with remaining soup.
05 - Simmer 5 more minutes to thicken. Serve topped with spring onions.

# Notes:

01 - Can use fresh, frozen or canned corn.
02 - Part blending creates ideal texture.
03 - Spring onions add fresh garnish.
